# How to Make It:

01 - In a medium bowl, combine shredded chicken, BBQ sauce, honey, hot sauce, salt, and pepper. Mix thoroughly and set aside.
02 - Heat olive oil in a skillet over medium heat. Add sliced red onions and chopped bell peppers. Sauté for approximately 5 minutes until softened and lightly browned. Remove from heat.
03 - Lay a tortilla flat on a clean surface. Sprinkle half of one side with cheddar and mozzarella cheeses. Layer with BBQ chicken mixture, sautéed onions and peppers, and fresh cilantro.
04 - Fold the tortilla over to create a half-moon shape, completely enclosing the filling.
05 - Heat a clean skillet or griddle over medium heat. Place the filled tortilla in the skillet and cook for approximately 3 minutes per side until the tortilla is golden and crispy and cheese is melted.
06 - Remove from the skillet and let cool for 1 to 2 minutes. Cut into wedges.
07 - Repeat steps 3 through 6 with remaining tortillas and filling.
08 - Serve warm with sour cream, guacamole, and lime wedges if desired.
